Hello,
I am trying to figure out how to insert text boxes and call outs. I searched "Help" and it gives a description of the terms but does not show how to do it. I know the spreadsheet has the capability because I have opened Excel sheets with O.O.

As with all things, its simple if you know how to do it.
On the left side of the spreadsheet is the Main toolbar.
Fourth button from the top of that toolbar is the Drawfunctions.
If you long-click on that icon it will open a floating window.
Most right is the Callout. Click on it and go back to the spreadsheet. Point your
mouse to the point were you want to start the line of the Callout to be . Keep the button pressed and drag to the place where you want the Callout-body to be. Release the button.
Textbox is available with the button beneath the Drafunction which is the Formfunction-button.
Same way, long click and drag the desired form on the spreadsheet.

Here's a screen shot of the text box icon DiGro is referring to (Though this was done in writer, It is the same in Calc). The call out icon is in the rightmost part of the Draw Function toolbar.
