How is the way of saving the current document to *.xlsx format (MS Office 2010) ?
And how to make it as default file format?

You may be able to do that in LibreOffice, but it's not recommended, because the import and export filters aren't perfect and the two aren't really compatible at all; MSO 2007 and up have new features that aren't available in OOo or LO, so how should they be supported there? Remember that OOo isn't intended as a free clone of MSO, it's an office suite in its own right.
So, save in OOo's own format and only save in any MSO format if you have to - send it to somebody who wants it in that format. If you're doing this for work, eh, get an MSO license, that will in the long term cost you less in terms of frustration and time loss over incompatibilities.

I split your next question to a separate topic, find it here. Please stick to one question per topic.

doc, xls and ppt are 100% suported by Microsoft and 95% supported by other office suites. There is no technical reason to use their x-files as exchange format. These file formats decrease the level of compatibility (which was why they have been bribed through the standardisation boards).
