Which version are you using?
In OOo 1.x File > Properties > Statistics will give you the entire document.
In OOo 2.x Tools > Word Count will give you both entire document and selection.

I'm using the version 2.
But there is no word count in the tools menu.
I'm using a French version, maybe it is different.

It should be there as the third option down in the Tools Menu. I do not think that different language versions have different menu positions. If it's not there I would be suprised.
