how do I colour the sheet tab or label in Calc? I can do it in Excel but can't see how in Openoffice. I am using Ubuntu hardy Heron.

If you use the version supplied with Ubuntu you should be able to color the tabs.
The official OOo do not support this feature, most likely due to not being part of the ODF standard.
Another difference if between the OOo version and the one supplied with Ubuntu is the numbers of rows and columns. |

I am using OOo version 3.2 does this mean I can't colour the tab? |

General on a Linux distribution you should be using what is offered from the repositories. Only if you are experienced or want to prepare our own application you should download files for installation.
Version 3.2 is offered from this link with instructions for adding repository https://edge.launchpad.net/~openoffice-pkgs/+archive/ppa
OOo 3.2 is not offering colored tabs!
Please find link to the version used by Ubuntu http://go-oo.org/download/
