I would like to run OpenOffice in a scripting mode without X windows. Looking at the soffice command line options, this seems possible. However, it does not seem possible to install OpenOffice in the first place without X. Is this true, or is there a way around it?

It's worse than that, even in -headless mode (as at v1.1.0) it requires $DISPLAY to point to a valid X server. You have two obvious options; one is to start it in X (or over an ssh session with X forwarded), the other is to use a small virtual X server:
