According to the issue tracker, here are features, enhancements, and patches targeted for 2.1:

(By the way, anyone can you can his own issue tracker queries.)
However, according to the following two, recent links from a Sun Microsystems guy, that's not the way the system works. They don't say, "We want this, this, and this in 2.1 and that other thing in 3.0." Instead, they say, "This and this are ready. They're big changes, so let's call it 3.0."

So, I would not consider the issue tracker query "set in stone" until close to the 2.1 release is due. Sometimes features are targeted, but they aren't ready, so they're retargeted. But for the issues now marked FIXED, I'm guessing they have a good chance to meek their target.
Sometimes you have to open an issue to guess. Consider "Support for multiscreen displays (dual monitors)." A comment from a developer (cl) recently (August 2006) states the target is 2.1, so I think it will be ready for 2.1. (Developer user names usually have one or two characters.)
