To start with I would like to insert consecutive numbers down a column in a table.
And then if it is possible to create Product Numbering eg CAR001, CAR002, CAR003... to whatever. |

| Put a number or text + number in a cell, move cursor to the bottom right of the cell until it changes to a cross hair, click and drag down. |

This sounds great, but I can't seem to get a crosshair. What am I missing?

Oops, your in Writer not in Calc but we can set up a Writer table that way using Calc.
In Calc go to cell A1 (or wherever you want) and do as I said. Now select the numbers and any other columns that you will want in Writer and copy. Go to Writer and do Edit > Paste Special > Unformated text. Select everything that was pasted then do Table > Convert > Text to Table and accept the defaults. |
